WFMW: Delicious Mexican Recipes

I love it when I try a new recipe and it is super yummy! Every once in a while, I make a list of new recipes to try. It’s always interesting to see how they turn out. Some recipes are a one try only deal, but a few are “keepers” that are added to my collection of regular meals in our home.

This week, I thought I’d share a recent discovery with you, one that I definitely recommend if you like Mexican inspired meals. I am also including a vegetarian alternative, which is equally good, in my opinion.

Chicken Enchiladas with Spinach Cream Sauce – The name says it all on this one. These enchiladas are delicious!

Fiesta Rice – This yummy rice recipe pairs nicely with the enchiladas. The nutty flavor of the brown rice sets it apart from typical Mexican rice recipes.

If you are a vegetarian, try Chili-Cheese Black Bean Enchiladas. These taste quite like something you would eat in a Mexican restaurant, but without the meat. In fact, I think most non-vegetarians would enjoy this recipe as well. The Fiesta Rice would be good with these enchiladas too (if you substitute vegetable broth for the chicken broth), but you might want to leave the black beans out of the rice since these enchiladas have a lot of black beans already.

All of these recipes are from Cooking Light. I am a huge fan of their recipes and many of our meals come from their website. They do a great job of creating healthy recipes that are filled with flavor.

    I would totally try new recipes, but I refuse to cook. I hate it. And my husband is so much better at it then I am. /giggle

    It's 6 am and I am reading all these WFMW posts with recipes and thinking … I am starving!! These all sound absolutely wonderful! We are mexican food freaks at our house … eat some form of it at least once a week. So, now I have new fodder for the troops to try! Thanks!

    Those sound yummy. The other day I made my own spanish rice with long grain brown rice, then added cumin and salsa. We had in tortillas with refried black beans and a variety of toppings. They were so yummy and inexpensive.
